Grade A-02 (2400–2600 cps) is a versatile, mid-viscosity Locust Bean Gum grade well suited to sauces, bakery, meat products and general-purpose food formulations.
Generally, yes. If your application doesn't need A-01's maximum viscosity, A-02 is the more economical choice, and it's common in large-scale sauce, bakery and meat production for that reason.
A-02 is typically used at 0.1% to 0.9%, depending on the target texture and application.
